Responsibilities

  • Design and implement seasonal menus in collaboration with the restaurant's Sommelier to ensure a harmonious pairing of food and wine.
  • Lead and mentor the kitchen staff, including scheduling weekly training sessions to enhance culinary skills and ensure adherence to the highest standards.
  • Oversee the procurement of ingredients, prioritizing local and sustainable sources to maintain the restaurant's commitment to quality and environmental responsibility.
  • Conduct monthly inventory audits to manage costs effectively while ensuring the kitchen is well-stocked with necessary supplies.
  • Collaborate closely with the Front of House Manager to ensure a seamless dining experience for guests, focusing on the integration of service and cuisine.
  • Initiate and lead weekly meetings with the kitchen team to discuss menu feedback, kitchen efficiency, and upcoming events or special bookings.
  • Implement and maintain rigorous health and safety protocols in the kitchen, conducting regular checks to comply with legal and company standards.
  • Engage with guests to receive direct feedback on dining experiences, using insights to refine dishes and menus.
  • Experiment with new cooking techniques and ingredients to continuously innovate the menu, keeping the restaurant at the forefront of the culinary scene.
  • Work with the Marketing team to showcase the restaurant's culinary offerings through social media, cooking demonstrations, and guest chef events.

Requirements

  • A culinary arts degree from a recognized institution such as Le Cordon Bleu, Culinary Institute of America, or Johnson & Wales University.
  • At least 5 years of experience in a fine dining or luxury restaurant environment, with a minimum of 2 years in a leadership role.
  • Professional certifications such as Certified Executive Chef (CEC) or Certified Master Chef (CMC) from the American Culinary Federation.
  • Demonstrated ability to innovate and create high-quality, unique dishes that cater to a sophisticated clientele.
  • Proven track record of managing kitchen operations efficiently, including staff training, menu planning, and inventory management.
  • Strong knowledge of food safety and hygiene regulations, with certifications in HACCP (Hazard Analysis Critical Control Point) or similar.
  • Experience in sourcing ingredients from local and sustainable suppliers, with an understanding of seasonal product availability.
  • Excellent leadership and communication skills, capable of mentoring a team and working collaboratively with other departments.
  • Flexibility to work evenings, weekends, and holidays as required by the restaurant's operating hours.
