We are seeking a talented and experienced chef to join our client's prestigious hotel located in the heart of New-York City. This role involves crafting innovative dishes that meet the luxury standards of the establishment, overseeing kitchen operations to ensure efficiency and compliance with food safety regulations, and leading a team to maintain the highest quality of culinary offerings. Responsibilities

Chef de Cuisine is the head chef responsible for overall kitchen management. Their duties include menu creation, staff supervision, kitchen organization, quality control, and ensuring a smooth workflow. Chef de Cuisine also collaborates with other departments, manages food costs, and contributes to the culinary direction of the establishment. They play a crucial role in maintaining high culinary standards and customer satisfaction.

This includes designing innovative menus, overseeing the procurement of high-quality ingredients, and collaborating with the hotel's management to align the culinary offerings with the establishment's luxury brand. Additionally, the Chef will play a key role in training and mentoring kitchen staff to uphold excellence in every dish served.

  • Develop seasonal menus and daily specials that reflect the hotel's luxury standards, incorporating fresh, high-quality ingredients and innovative culinary techniques.
  • Conduct weekly inventory checks and work closely with suppliers to ensure the procurement of premium ingredients while managing costs effectively.
  • Lead, train, and mentor kitchen staff, organizing monthly workshops on food safety, culinary skills, and customer service excellence.
  • Collaborate with the Food and Beverage Manager to design food pairings for events and special occasions, enhancing guest satisfaction and dining experience.
  • Implement and maintain strict food safety and cleanliness standards in the kitchen, conducting regular audits to ensure compliance with health regulations.
  • Monitor kitchen operations to optimize workflow and efficiency, implementing improvements as needed to meet high-volume demands without compromising on quality.
  • Engage with guests to receive feedback on dining experiences, using insights to refine menu offerings and service.
  • Work with the marketing team to showcase the hotel's culinary offerings through social media and other marketing channels, highlighting seasonal menus and special culinary events.
  • Manage the kitchen budget, including labor and food costs, to ensure profitability while maintaining the establishment's high standards.
  • Organize and oversee the kitchen's participation in local food festivals and competitions, promoting the hotel's reputation as a leader in luxury dining.

Requirements

Education:

  • Bachelor's degree in Culinary Arts or related field from an accredited institution.
  • Advanced diploma or degree from a renowned culinary school (e.g., Culinary Institute of America, Le Cordon Bleu).

Certification:

  • Certified Executive Chef (CEC) designation from the American Culinary Federation (ACF).
  • Food Safety Manager Certification from a recognized organization (e.g., ServSafe or National Restaurant Association).
  • Optional: Wine and Beverage Certificate Program completion for enhanced understanding of pairing principles.

Skills and Experience:

  • A minimum of 5 years' experience in a leadership role within a luxury or fine dining kitchen.
  • Demonstrated ability to create innovative and high-quality menu items that cater to a luxury clientele.
  • Strong leadership skills with experience in training and mentoring kitchen staff to achieve excellence.
  • Proficient in managing kitchen operations, including inventory, budgeting, and compliance with food safety regulations.
  • Excellent communication skills for effective collaboration with both kitchen staff and management.
  • A track record of successfully managing high-volume, fast-paced kitchen environments without compromising on quality or service.
  • Experience in organizing and participating in culinary events, competitions, and promotions.
  • A deep understanding of various culinary techniques and cuisines, with a commitment to ongoing learning and culinary development.
