A prestigious 5-star boutique resort in Tanzania is seeking a driven and hands-on F&B Manager to lead and elevate its food and beverage operations.
This is a dynamic, floor focused role that combines exceptional guest experience with strong operational discipline, cost control, and performance optimization.
The ideal candidate will be highly present in daily operations, working closely with kitchen and service teams to ensure consistency, efficiency, and profitability—while
delivering a refined and memorable dining experience in a luxury environment.
Responsibilities
- Oversee the full Food & Beverage operation, including restaurant, bar, and in-room dining.
- Ensure consistent delivery of high-quality service and exceptional guest experiences across all outlets.
- Maintain strong coordination between kitchen and service teams to ensure smooth daily operations.
- Monitor service standards, presentation, and overall guest satisfaction.
- Ensure all outlets operate efficiently while maintaining luxury service standards.
- Manage and optimize food and beverage costs in line with budget and targets.
- Oversee purchasing, supplier relationships, and inventory management.
- Implement and maintain effective stock control systems and procedures.
- Monitor wastage and introduce initiatives to reduce losses and improve efficiency.
- Analyse financial performance and identify opportunities for cost savings and revenue improvement.
- Collaborate with the Head Chef to review, develop, and refine menus.
- Ensure menus are aligned with the resort’s concept, guest expectations, and pricing strategy.
- Balance creativity with operational feasibility and cost efficiency.
- Regularly evaluate menu performance and adjust offerings accordingly.
- Lead, train, and motivate the F&B team to deliver exceptional service.
- Establish a culture of accountability, discipline, and continuous improvement.
- Ensure grooming, presentation, and service standards are consistently upheld.
- Conduct training sessions and performance evaluations.
- Develop team capabilities and support career growth.
- Drive upselling and revenue-generating initiatives across all outlets.
- Ensure a seamless and memorable dining experience for all guests.
- Handle guest feedback and complaints professionally and proactively.
- Continuously enhance the F&B offering based on guest preferences and feedback.
- Support overall guest satisfaction and reputation management.
- Maintain clear and effective communication with all departments.
- Work closely with Front Office, Reservations, and Housekeeping to align guest experiences.
- Ensure smooth coordination for special events, VIP guests, and private dining experiences.
- Provide regular operational updates and reports to senior management.
Requirements
- Food & Beverage operations within luxury or upscale hospitality.
- Strong hands-on operational background with a visible presence on the floor.
- Proven experience in cost control, budgeting, and performance optimization.
- Experience in boutique hotels or small luxury resorts preferred.
- Strong leadership and team management skills.
- Excellent organizational and problem-solving abilities.
- High attention to detail and commitment to service excellence.
- Ability to work under pressure in a fast-paced, dynamic environment.
- Comfortable working in an owner-driven, hands-on operational setting.
- Degree or Diploma in Hospitality Management, Food & Beverage Management, or a related field.
- Fluency in English (mandatory).
- French or additional languages are a strong advantage.
- Proficiency in POS systems, inventory management tools, and Microsoft Office.
- Strong understanding of luxury hospitality standards and international guest expectations.
- Knowledge of financial reporting, cost analysis, and revenue management principles.
Work conditions
- Accomodation: Accommodation provided.
- Work Schedule: 6 days of work per week with 1 day off.
- Location: Zanzibar, Tanzania
- Start Date: As soon as possible.
Salary:
- AED 11,000 to AED 12,000, depending on experience.
