Job description

We are recruiting on behalf of our client, a luxury Michelin-starred restaurant in Monaco's glamorous Monte Carlo area, for the position of Second de Cuisine. The restaurant is famous for its innovative menu and top-tier service. The successful applicant will assist the Head Chef in preparing dishes, managing kitchen staff, and maintaining high culinary standards. Candidates must have a background in gourmet cuisine and demonstrate a commitment to excellence. This position offers the chance to be part of an elite culinary team in a world-renowned establishment.

Responsibilities

  • Assist the Head Chef in daily meal preparation and execution
  • Manage and supervise junior kitchen staff, ensuring smooth kitchen operations
  • Maintain the highest standards of food quality and presentation
  • Collaborate with the Head Chef to develop new menu items and seasonal dishes
  • Ensure all kitchen equipment and workstations are clean and organized
  • Monitor inventory levels and assist in ordering supplies as needed
  • Enforce health and safety regulations, ensuring a safe working environment
  • Coordinate with the front-of-house staff to ensure timely and accurate food delivery
  • Participate in weekly menu planning meetings
  • Conduct regular training sessions for junior chefs and kitchen assistants
  • Assist in monthly inventory checks and cost control measures
  • Handle customer feedback related to food quality and make necessary adjustments

Requirements

  • Culinary degree or diploma from an accredited institution
  • Minimum of 5 years of experience in high-end or Michelin-starred restaurants
  • Strong knowledge of gourmet cuisine and fine dining
  • Proven experience in a supervisory kitchen role
  • Excellent organizational and leadership skills
  • Ability to work under pressure and in a fast-paced environment
  • Proficiency in kitchen management software and inventory control systems
  • Fluent in English; knowledge of French is a plus
  • Strong understanding of food safety and sanitation regulations
  • Certification in food safety and hygiene practices
  • Creative and innovative approach to menu development
  • Excellent communication skills and ability to work as part of a team

Work conditions

  • Full-time position located in Monte Carlo, Monaco
  • Work hours: 40-50 hours per week, including weekends and holidays
